Have a RPI 4. I have it set up with the 7" official touchscreen, and like to use it for a couple of other very non-intensive tasks. I want to run PiAware on this device, but I want it to run “on the side” instead of being the only function.
I feel like I recall coming across a tutorial for this recently but can no longer find it.

That’s not a problem at all. You should not use the Piaware image but the package installed on top of Raspberry OS
Once your operating system is running (maybe it is already) simply follow the official instructions:
