Remove the cable from the Pi or the Router and WiFi should take over.
If you need to go back to eth0, simply plug the cable in again and it should take over from the WiFi if you have not change the routing table metric.
In answer to the title of this thread; By Default you can have both eth and wlan configured. The wireless carries no traffic whilst the lan0 cable is connected.
