that’ll solve most of your concerns - temp, power & water proofing.
Peronally I’d use a Pi4 (or Pi3) unless you have a good reason to use a Zero.
For a remote location, I use a Dlink dwr921 which looks like a domestic router, but also has a 3G/4G modem built in. This model is getting a bit old and wouldn’t be my current choice, but mine has been running successfully for 3 years.

The zero 2 w has lower power than pi3/4 i think. So i can understand the appeal.

I wouldn’t use the old zero though, it’s just too slow.
