I’ve looked for an answer to this in the FAQs but can’t find it: why are some callsigns shown in red?

Some callsigns are in red to indicate medical air ambulances. Easy way to track them.

Would these include donor organs being flown in for transplant surgeries?

Yes. There was an organ run out of KSGJ last night to KMEM on a Lear 31.
