I was told this a while back, just can’t remember the reason?
Why does my 30 day ranking change all the time from day to day ?

Because everyday you have a ‘new’ 30 day period, perhaps?
I know it sounds like a smart alec answer, but it seems plausible to me.
And the the daily data is in utc time, not local time, so for some people the cutoff will happen during the night with low traffic, for others during the day with more traffic, so there will be a lot of movement during the day.
