I don’t think anyone has come out with an official explanation for why MS804 went missing yet. One thing I noticed when I looked up MS804 here on FlightAware is that all flights from 7 May through 20 May are B738s excluding the 18 May flight, which is an A320. Anyone know why they might have switched planes?

The flight is in the schedule as a B738 since late march, but the incident flight is widely reported as an A320 (and the tail we have for it is an A320), so we corrected yesterday’s flight to be an A320.

When the airline swaps out a scheduled a/c with a different one (such as the B728/A320 case here), does that change get captured as some point and corrected in the stats/ logs?

It generally should, but from what I’ve been reading this flight has been operating as an A320 for a while despite being a B738 in the schedules. Not sure what’s wrong with the updates from EgyptAir.
